Summary:

The Meat Cutter is responsible for preparing, cutting, trimming, portioning, weighing, packaging, and labeling meat products for retail and wholesale sale at Niobrara Market. This position ensures that meat products meet established quality, freshness, sanitation, and food safety standards while maintaining a clean and safe work environment. The Meat Cutter also assists customers with product selections, preparation recommendations, and special orders; monitors and rotates inventory; and supports other store operations as needed, including receiving deliveries, stocking, cashier duties, and alcohol sales.

The Ponca Tribe of Nebraska is a federally recognized Tribe with its ancestral homeland located in Niobrara, NE. The Tribe does not have a reservation in the classic definition; rather, the Ponca Restoration Act defined its jurisdiction as a 'Service Delivery Area' comprised of 15 counties throughout parts of Nebraska, Iowa, and South Dakota. Within its Service Delivery Area, the Tribe offers a broad range of health, social, educational, and cultural services.

Essential Responsibilities and Duties:

  1. Cutting and trimming meat: Cutting loins into smaller cuts like steaks, roasts, ground meat, and more, using knives, saws, meat grinder, slicer, scale and other specialized tools
  2. Weighing and packaging: Accurately weighing meat portions and packaging them for sale, including labeling with relevant information like cut, grade and best-by date.
  3. Customer service: Answering customer questions about meat cuts, providing recommendations for cooking methods and fulfilling special orders.
  4. Maintaining sanitation: Keeping the work area clean and sanitized, including properly cleaning and sharping knives and equipment.
  5. Inventory management: Monitoring meat stock levels and rotating products to ensure freshness.
  6. Quality control: Inspecting meat for quality and removing any defects or blemishes
  7. Following safety procedures: Adhering to all food safety guidelines, including proper handling of meat products and maintaining appropriate temperatures.
  8. As needed, assist with receiving and unloading deliveries, cashier duties, alcohol sales, stocking and other general store operations.
Relationships and Authority:

This position will report to the store manager.

Qualifications:

Minimum:
  1. Previous meat-cutting, meat-processing, butcher, grocery meat department, or related food-processing experience preferred; demonstrated ability to safely learn and operate meat-processing equipment required.
  2. Knowledge of meat types, cuts, and preparation methods
  3. Ability to work safely around knives, saws, grinders, slicers, refrigerated areas, and freezers.
  4. Familiarity with food safety and sanitation guidelines
  5. Physical stamina to handle heavy lifting and prolonged standing
  6. Excellent attention to detail and ability to work in a cold environment.
  7. Must be at least 19 years of age

Preference will be given to Ponca Tribe of Nebraska members or members of a federally recognized tribe. However, all qualified individuals are eligible.
